BNI™ 082.50c: Xylitol sweetener (carbohydrate referent)

BNI™ 82.50c: Xylitol sweetener, NOW, USA, 2011.

Xylitol is a sugar alcohol sweetener which can be used instead of sugar. It is as sweet as sucrose but less energetic (2.5 kcal/g). Xylitol is used here as a real-food BNI referent as it represents an 'extreme' case of unbalanced food for carbohydrate content, none of which is sugar. For a theoretical referent, see BNI 90.00c, 'pure carbohydrate' referent.
